Nikki, I for sure think that this would also be a great formative assessment for you to use in fifth grade to gain an idea of what they retained from third grade. It would be super beneficial to you in order for you to have an understanding of what may need to be touched on again in order for them to be able to make those connections to what they are learning in fifth grade. The concept map would end up being both a pre and post kind of assessment. So cool that you get to have them through a number of years so that you can do this kind of stuff!
